Bring a taste of the tropics to your holiday cookie party!
Ingredients:
3 ½ cups flour
1 ½ teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon salt
2 sticks butter (unsalted preferred)
1 ¾ cup light brown sugar
½ cup sugar
2 eggs
1 ½ teaspoons vanilla bean paste (or same amount of vanilla extract)
8 Ava Organics Crispy Rollers, coarsely crushed
1 cup white chocolate chips
1 cup semi-sweet chocolate chips
½ cup chopped macadamia nuts
½ cup chopped dried apricots
½ cup AVA “Gold Dust” (the delectable crispies at the bottom of the Ava bag)
Instructions:
Preheat oven to 350°F. Spray two cookie sheets with cooking spray or line with parchment
paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl beat the butter with the brown sugar, and regular sugar for 1 to 2 minutes
on medium high speed with a mixer until light and fluffy. Add the eggs one at a time, beating on
low after each addition. Scrape the sides of the bowl with a rubber spatula and beat on low for 30
seconds, or until incorporated. Add the flour mixture and mix on low speed until flour is mixed
in.
Fold in the AVA organics crispy rollers, white chocolate chips, semi-sweet chocolate chips,
macadamia nuts, and dried apricots.
With a spring-loaded small ice cream scoop, or two spoons, drop tablespoon-sized portions of
dough on the cookie sheets, approximately 2 inches apart. Sprinkle approximately 1 teaspoon of
the AVA “Gold Dust” on the top of each dough portion.
Bake for 8 to 10 minutes, or until cookies are set in the center and golden brown.
